I am trying to get in the habit of sharing recipes from my kitchen. People are always asking me,"How do you make that, I've gotta have that recipe, etc.", but I can rarely duplicate anything since ingredients are thrown in on my whim. So here's something new and yummy...
I've discovered frittata! My mouth always waters at the thought of quiche but pie crusts aren't my forte so I rarely make them. Frittata is so much easier and doesn't require a crust so of course I've fallen in love. The other big plus is that you can use basically whatever add-ins you want. As long as you have eggs, milk and cheese, you're good to go!
Whatever Fritatta:
You will need:
*A heavy cast iron skillet
*Olive oil for frying
*About 4 cups of Whatever you have: fresh veggies, potatoes, onions, garlic, herbs, bacon, sausage, cubed bread. Prepare basically enough to fill your frying pan, because the ingredients will shrink as they cook.
*1/2 stick butter (more or less, or none at all, I just love butter!)
*1 1/2 cups whole milk (or cream, or 1/2 in 1/2, YUMMY!)
*4-5 Eggs
*1 cup grated cheddar, pepper jack, swiss cheese, etc. (hard cheeses work well)
*Salt, Pepper, and Seasonings to Taste
Preheat Oven to 350. Heat skillet on medium high and add a tablespoon of oil, (or more, remember, Whatever you want!) saute' up your veggies until they are nice and colorful, yet still firm. If you are adding bacon or sausage I would recommend you cook them in a separate pan and add them to the veggies as they have different cooking times. If you're adding bread cubes, do that at the end, etc. While your goodies are cooking, in a medium bowl, mix your eggs and milk well, then add your grated cheese. Don't stir in the cheese too much.
Add as much salt and pepper as you prefer to the milk mixture. I also like to use Spike or other veggie seasonings, cayenne, etc. Add the butter to the vegetable mix and stir well to coat the pan and the veggies. Pour the milk mixture into the skillet. Put the skillet in the preheated oven on the center rack (use a hotpad, the handle will be hot!). Bake for about 35 minutes or until set. I like to let the fritatta sit out for a couple hours to let all the flavors blend, but you're welcome to eat it while it's hot!
